How It Started
Born on the North Shore
North Shore Tacos was founded in 2010 by Joey Fullmer, who brought his authentic Baja-style recipes to Oahu's North Shore with a simple mission: serve the freshest fish tacos on the island using sashimi-grade fish caught daily by local fishermen.
What started as a small operation in Hauula quickly earned a devoted following. Word spread along the coast — locals and visitors alike couldn't get enough of the ocean-to-table flavors. Every salsa, every tortilla, every batch of rice and beans is made from scratch, in-house, every single day.
By 2015, demand had grown so much that we expanded to a food truck at Sharks Cove in Pupukea, bringing our Baja-Hawaiian cuisine to one of the most iconic snorkeling spots on the North Shore. Today, both locations serve seven days a week, and our food truck is available for catering across all of Oahu.
The recognition followed the quality. Sunset Magazine named us the #1 Fish Tacos, and we've accumulated over 1,000 five-star reviews from customers who keep coming back. After 16+ years, our commitment hasn't changed: the freshest ingredients, the boldest flavors, no shortcuts.

Founder & Head Chef
Joey founded North Shore Tacos in 2010, bringing authentic Baja-style recipes to Oahu's North Shore. With 16 years of experience perfecting ocean-to-table cuisine, he oversees every dish that leaves the kitchen — from the sashimi-grade fish tacos to the scratch-made salsas. His philosophy is simple: the freshest catch, the boldest flavors, no shortcuts.
Elen Corazzari
Co-Owner & Operations Manager
Elen has been the driving force behind North Shore Tacos' growth for over 12 years. From managing the Hauula restaurant to coordinating the Sharks Cove food truck expansion in 2015, she ensures every guest experiences the same quality and aloha spirit that made the brand a North Shore institution. She also manages all catering operations across Oahu.
